That's a wrap!

Looking for some yummy school lunch ideas – beyond the same old sandwiches? With these quick and easy recipes, school lunches are a wrap, literally. Using tortillas, you can roll up those healthy ingredients in a perfect hand-held sandwich, or slice them for cute bite-size pinwheels – perfect for jazzing up the lunch box. These versatile recipes also make great on-the-go or after-school snacks.

Note: To make any wrap gluten-free, swap gluten-free tortillas or corn tortillas for flour tortillas.

Sun-Dried Tomato Basil Pinwheels

Serves 6

  • 1/2 cup sun-dried tomatoes

  • 8 oz cream cheese, low fat

  • 1/4 cup spinach

  • 2 cloves minced garlic

  • 1/4 oz Parmesan cheese

  • 1/8 tsp salt

  • 2 medium tortillas, whole wheat

  • 15 basil leaves, fresh

Dice the sun-dried tomatoes. Add to a bowl with the softened cream cheese, chopped spinach, minced garlic, grated Parmesan cheese, and salt. Stir thoroughly to combine. Spread filling on tortillas (you can use a third if needed). Try to spread the filling all the way to the edge of the tortillas. Top with fresh basil leaves and then roll up tightly. Use a serrated knife to slice each roll into 1-inch pieces. Cut the roll seam side down to help the pinwheels stay together.

​Veggie Tortilla Roll-Ups

Serves 4

  • 1/2 cup SuperEasy Hummus (recipe below)

  • 4 whole wheat tortillas

  • 2 medium carrots, peeled and grated (about 1 cup)

  • 1 avocado, sliced

Spread 2 tablespoons of hummus on each tortilla, taking care to cover the edges, since the hummus will act as a glue to hold the wrap together. Sprinkle 1/4 cup of the grated carrots along the closest edge of each tortilla, and lay 1/4 of the avocado slices on top of the carrots. Roll up, slice in half diagonally and serve.

Supereasy Hummus

Makes 1 1/2 cups

  • One 15-oz can chickpeas (garbanzo beans), drained and rinsed

  • 1 garlic clove

  • 2 Tbs tahini

  • 3 Tbs lemon juice

  • 1 tsp salt

  • 1/3 cup olive oil

Place the chickpeas, garlic, tahini, lemon juice, and salt in a food processor and pulse to combine. Add the olive oil and continue to pulse until smooth and creamy. TIP: Tahini is a sesame seed paste that can be found at your local grocery, usually near the peanut butter or in the kosher aisle.

Banana Dog Bites

Serves 4

  • 2 bananas, peeled

  • 1/4 cup peanut butter, divided (or use almond or

sunflower butter, or Nutella spread)

  • 2 tortillas

Place one tortilla on a flat surface and spread 2 tablespoons

of peanut butter on the tortilla to evenly coat. Place one banana

near the edge of the tortilla and roll it up. Slice into 1/2 inch rounds and serve.

NOTE: If your tortilla bread is stiff, place it in the microwave in between two pieces of moist paper towel and heat for 15-20 seconds or until softened.
